These cheese biscuits are actually more like muffins with cheese. In one of our favorite restaurants called Jim N Nicks, they always serve this kind of cheese biscuit as their complimentary. I’ve been trying to figure out how to make it at home because we love it so much. Finally I think I created a recipe that’s pretty close.
1 1/2 cups + 2 tbs all purpose flour
2 tsp baking powder
3/4 cup sugar
1 cup shredded cheddar cheese + 1/4 cup to sprinkle on top
1/2 stick butter, softened
1/2 tsp vanilla
– Prepare Oven to 375 F
– Mix ingredients together
– Pour into greased muffin pan
– Sprinkle cheese on top of each muffin
– Bake for 25 minutes for regular size muffin pan or 15 mins if using small size muffin pan.
