Thai Red Curry Beef

Sebenernya waktu itu pengen bikin lontong sayur, tapi begitu liat di closet ada Thai Red Curry paste yang belum kepake, jadinya iseng-iseng nyoba bikin. Ternyata enak juga dimakan pake lontong atau nasi biasa.


Ingredients:
– 1 – 2 Tbs Thai Red Curry Paste
– 1 can Coconut Milk
– 3 tbs Fish Sauce
– 1/3 cup Chicken Stock
– 3 tbs Brown Sugar
– Salt & Pepper
– Chili Pepper
– Beef
– Bamboo Shoot or Coyote squash (Labu Siam)
– Water

Directions:
In a medium saucepan combine red curry paste with coconut milk and water (until it reaches the thickness you want), simmer for 5 minutes. Add bamboo shoots or coyote squash, fish sauce, brown sugar, salt & pepper, and chicken broth.
Add beef or any kind of meat you like, let it cooked until the meat is tender. For best result remove into a slow cooker and cook for few more hours.

Serve with rice cakes (lontong) or steamed rice.
