Mixed Nut and Corn Flake Brittle

Ingredients:
3/4 cup sugar
1/2 cup light corn syrup
1/4 cup butter
6 cups cornflakes
1 1/2 cups mixed nuts
Oil spray for baking pan

Directions:
– Line a 15 in x 10 in x 1 in baking pan with foil and heavily grease the foil; set aside.
– In a large heavy saucepan, combine the sugar, corn syrup and butter. Cook and stir over medium high heat until sugar is dissolved and mixture begins to a boil. Remove from the heat. Stir in cornflakes and nuts.
– Spread into prepared pan. bake at 300 for 25 minutes. Cool on a wire rack. break into pieces. Store at room temperature in an airtight container.

Tahu Goreng Bawang

Ingredients:
Tahu Goreng:
– Tahu, potong kotak-kotak kecil
– Air secukupnya untuk merendam
– Garam secukupnya
– Bawang putih
– Ketumbar
– Kunyit bubuk
– Ajinomoto (Optional)
– Minyak untuk menggoreng

Bahan taburan:
– Tempe, dihaluskan di chopper atau food processor
– Bawang merah, iris halus
– Bawang putih, iris halus
– Garam
– Merica
– Ketumbar
– Ajinomoto (optional)
– Cabe rawit, potong kecil-kecil
– Bawang goreng
– Minyak untuk menumis

Directions:
Tahu goreng:
– Campur air, garam, bawang putih, ketumbar, kunyit dan ajinomoto, rendam tahu selama kurang lebih 30 menit.
– Goreng hingga kuning kecoklatan, angkat tiriskan.

Taburan:
– Panaskan minyak, tumis bawang putih dan bawang merah hingga harum
– Masukkan tempe, garam, ketumbar, ajinomoto.
– Aduk-aduk terus hingga tempe menjadi kuning kecoklatan
– Masukkan cabe rawit, aduk rata
– Angkat, tiriskan sampai benar benar kering

Cara menyajikan
– Taburkan gorengan tempe ke atas tahu, tambahkan bawang goreng jika suka

Sweet Cornbread

I like cornbread especially when it’s sweet and not too dry. This recipe came from http://www.allrecipes.com. Based on the reviews, I cut the sugar a little bit.

Ingredients:
* 1 cup all-purpose flour
* 1 cup yellow cornmeal (I used white cornmeal cause that’s what I had.. but it still turned out good and yellow 🙂 )
* 2/3 cup white sugar (I used less than 2/3 cup)
* 1 teaspoon salt
* 3 1/2 teaspoons baking powder
* 1 egg
* 1 cup milk
* 1/3 cup vegetable oil

Directions:
1. Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.
2. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan.
3. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Ingredients:
* 2 pounds ground beef
* 2 cups diced onions
* 2 (15 1/2-ounce) cans pinto beans
* 1 (15 1/2-ounce) can pink kidney beans
* 1 (15 1/4-ounce) can whole kernel corn, drained
* 1 (14 1/2-ounce) can Mexican-style stewed tomatoes
* 1 (14 1/2-ounce) can diced tomatoes
* 1 (14 1/2-ounce) can tomatoes with chiles
* 2 (4 1/2-ounce) cans diced green chiles
* 1 (4.6-ounce) can black olives, drained and sliced, optional
* 1/2 cup green olives, sliced, optional
* 1 (1 1/4-ounce) package taco seasoning mix
* 1 (1-ounce) package ranch salad dressing mix
* Corn chips, for serving
* Sour cream, for garnish
* Grated cheese, for garnish
* Chopped green onions, for garnish
* Pickled jalapenos, for garnish

Directions:
Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

Ayam Bumbu Bali

Ingredients:
– 1 ekor ayam dipotong kecil-kecil sesuai selera (makin kecil makin mantep!)
– Air dari 1 buah jeruk nipis
– 2 buah tomat, diblender kasar
– lengkuas, 1 ruas jari, digeprak atau diparut
– 3 lembar daun jeruk
– 3 lembar daun salam
– kecap manis sesuai selera
– 1/2 sdt jahe bubuk
– Garam dan merica secukupnya
Bumbu yang dihaluskan:
– 7 bawang merah
– 3 bawang putih
– 10 lombok merah atau sesuai selera (gue pake lombok kering)
– kemiri
– 1/2 sdt terasi bakar

Directions:
– Lumuri ayam dengan garam dan jeruk nipis, diamkan kira-kira 15 menit
– Goreng ayam hingga matang, sisihkan
– Tumis bumbu halus, masukkan daun salam, daun jeruk, lengkuas dan jahe.
– Masukkan tomat, aduk rata.
– Tambahkan kecap manis, garam dan merica.
– Masukkan ayam ke dalam bumbu, aduk rata.

Chocolate Chocolate Chip Cookies

Ingredients:
* 1 cup butter, softened
* 1 1/2 cups white sugar
* 2 eggs
* 2 teaspoons vanilla extract
* 2 cups all-purpose flour
* 2/3 cup cocoa powder
* 3/4 teaspoon baking soda
* 1/4 teaspoon salt
* 2 cups semisweet chocolate chips

Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

Cracked Sugar Cookies

I felt kinda guilty cause I had not made any cookies for Christmas this year. I don’t know why, to me there’s something missing if I don’t bake cookies for Christmas. So finally today I looked for some simple cookie recipes online and I decided to try this based on the good reviews. It turned out perfect! I will definitely make this again 🙂

Cracked Sugar Cookies

Ingredients:
* 1 1/4 cups white sugar
* 1 cup butter
* 3 egg yolks
* 1 teaspoon vanilla extract
* 2 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon cream of tartar

Directions:
1. Preheat oven to 350 degrees F (180 degrees C). Lightly grease 2 cookie sheets.
2. Cream together sugar and butter. Beat in egg yolks and vanilla.
3. Add flour, baking soda, and cream of tartar. Stir.
4. Form dough into walnut size balls and place 2 inches apart on cookie sheet. Don’t flatten. Bake 10 to 11 minutes, until tops are cracked and just turning color.

Spicy Mac and Cheese Casserole

Berhubung masih ada beberapa bahan sisa bikin lasagna kemarin, tadi iseng-iseng bikin ini deh. Kebetulan Rene bilang pengen makan casserole yang meaty & cheesy hehe.
Berhubung porsinya gede banget, sisanya bisa disimpen di freezer 🙂

Spicy Mac and Cheese Casserole

Ingredients:
– 1 lbs ground beef
– 1 lbs ground saussage
– 1 lbs box elbow macaroni
– 1 can diced tomato with chili
– 2 small cans tomato sauce
– 1 small can tomato paste
– 1 onion, chopped
– 2 cloves garlic, chopped
– 1 tsp dried oregano
– 1 tsp dried basil
– 1 tsp dried Italian seasoning
– 300 gram ricotta cheese
– 1 egg
– 1 tbs chopped fresh parsley
– 1 cup shredded Parmigianno-Reggiano
– 1 package (8 oz) shredded Italian cheese mix

Directions:
– Cook elbow macaroni based on package direction, drain and set aside.
– In a large saucepan, combine ground chuck, sausage onion and garlic. Cook over medium heat until meat is browned and crumbled; drain.
– Add diced tomato, tomato sauce and tomato paste. Mix well.
– Add dried oregano, Italian seasoning and basil. Simmer for about 30 minutes.
– Combine macaronie and beef mixture. Spread into a 9 x 13 baking dish.
– In a small bowl, mix egg, ricotta cheese and fresh parsley together. Spread over macaronie mixture.
– Layer with shredded parmigianno-reggiano, and top with shredded Italian cheese mix.
– Cover with aluminum foil, bake in 350 F for 20 minutes. Uncover and bake for another 10 minutes or until hot and bubbly.

Serve with salad and garlic bread.

French Fried Onion Soup

Kadang-kadang pengen sup yang simple gak pake macem-macem, seperti di restaurant-restaurant jepang. Terus kepikiran bikin chicken broth pake bawang goreng plus french fried onion (yang sama orang sini biasanya dipake untuk taburan green bean casserole). Wahh enak ternyata kalo dingin-dingin gini hehe.

Ingredients:
1 kaleng chicken broth
2 gelas air
2 siung bawang putih
1 tsp dried parsley
garam dan merica secukupnya
bawang goreng
French Fried Onion
Vegetable Oil untuk menumis

Directions:
Panaskan minyak, tumis bawang putih hingga harum.
Masukkan air, chicken broth, garam, merica dan dried parsley. Rebus hingga mendidih. Taburi bawang goreng dan french fried onion sesaat sebelum disajikan.

Tiramisu

Ingredients
8 large eggs yolks (or 9 smaller yolks)
½ cup Caster Sugar + 2 tbsp (Caster sugar is just fine white sugar)
1½ cups Marsala Wine – Creamy
750g Mascarpone Cheese
500ml Cream
2 cups strong Espresso Coffee
3 tbsp Kahlua (or other liqueur that you like)
2 packets Savoiardi Sponge Finger Biscuits
Cocoa
Large Lasagne Dish

Note: Cups used are metric – 250ml. The tablespoon is 15ml.

Directions:
Zabaglione:
Whisk the egg yolks and ½ cup caster sugar together until pale and thick.

Over simmering water in a double boiler slowly add ½ cup Marsala to the yolk/sugar mixture. Keep on stirring until it thickens like custard (this takes about 7-8 minutes). Set aside to cool and whisk it occasionally as it cools so it is thick and creamy. I have some cold water ready in the sink so I can dip the bowl in it and stop the cooking quickly once the zabaglione is ready.

Tiramisu Cream
Stir (but do not beat) the mascarpone until well blended and smooth.

Whip the cream until thick – just past the soft peak stage.

Fold together the mascarpone, whipped cream and zabaglione one at a time (for example, add zabaglione to the mascarpone, and then add the cream to that mix).

A variation on this recipe keeps each of the three ingredients above separate and layers them up individually on top of the dipped biscuits. Try it both ways!

Dipping Mixture
Mix together the coffee, 2 tbsp of caster sugar, 1 cup of Marsala wine and 3 tbsp of Kahlua. Make sure the sugar is completely dissolved.

Assembly
Dip Savoiardi sponge finger biscuits into the cooled dipping mixture until they are moist but not sodden and line the bottom of the dish with them. The time varies due to variation in the sponge fingers.

Layer half of the Tiramisu Cream over the top of the biscuits.

Repeat another layer of dipped Savoiardi biscuits and Tiramisu Cream. Bang the dish firmly to make the Tiramisu Cream settle into the gaps between the biscuits. Cover and chill overnight.

Just before serving dust liberally with cocoa. If you want to be more lavish some grated chocolate is nice too.
